Baked Sweet Potato Fries Recipe
I have a deep fryer, but it's been stored in the garage for many years and it's gathering dust. I admit that, like many people, I sometimes have fries in restaurants or doughnuts at the carnival... but at home, I avoid frying as much as possible, so when I make "fries" at home, it's in the oven. For the potatoes, I had already told you how I do it (with my wedge recipe). For the sweet potatoes, I proceeded the same way... but it lacked crispness so I snooped on the net and I found a trick: the use of egg white.
For 4, you'll need:
4 orange-fleshed sweet potatoes
4 cases of sunflower oil
1 egg white
1 cac of turmeric
salt & pepper
Wash the sweet potatoes. Peel them or not (your choice) and cut them into sticks.
In a bowl, whisk the egg white with the oil and turmeric.
Add the potato sticks and mix well.
Arrange the chips flat on a baking tray covered with silpat or baking paper.
Season with salt and pepper.
Place in the oven at 200/210° and cook for about 30 minutes.
The fries are golden brown, crispy but still soft inside 🙂
